Make add-on's easier to add to invoice

This might be a variation on another post but i would like to be able to easily add - add on services to the invoice. Sometimes i have an issue where we decided on adding services after the order was made and id like to be able to add those specifc services instead of having to use the custom fee or redoing their order. (If ive been doing this wrong, please let me know!)
